Chicken Chimichangas with Green Sauce

These are WAY better than they look. And the green Sauce is YUMMO!

Sauce:
1 Jalepeno Pepper
2 Cans Diced Green Chillies (I love these!)
2 TBS Lime Juice
2 Can Cream of Chicken Soup (I used one, I liked it better, not so diluted. But thats just me)

Puree in a Blender, then pour into a pan and heat up

Chimichangas:
8 oz Cream Cheese
8 oz Montery Jack Cheese (or any cheese works, a good melty kind)
1/2 an envelope Taco Seasoning
1 lb Chicken Cooked and Shredded
1 C Green Onions

Wrap into Flour Tortillas and close with a toothpick. Stick into fryer and fry until golden brown (about 4 min on 350*). You can also put them into the oven, they just won't be as Crunchy. Bake in the oven @375* for 20-30 min, or until golden brown.

Top with Green Sauce, Cheese, and Sour Cream. YUMMY!!

Spinach and Artichoke Dip

Shopping List:
Frozen Spinich
Canned Artichoke Hearts
1 cup Parmesan Cheese
1 cup Ricotta Cheese (Room Temp)
1/4 cup Heavy Cream
1+ TBS Minced Garlic ( I usually do 2, but I LOVE Garlic)
1/4 TBS Crushed Red Pepper
1/4 TBS Parsley
1/4 TBS Thyme
2 TBS All Purpose Flour
2 Boxes (16 oz) Cream Cheese (Room Temp)
Salt and Pepper to taste


Put all ingredients in mixer mix well, I usually add the spinach last becasue it get caught on the mixer. When blended put into a Pam'd Dish.
Cook @ 450 for 30-45 min. It will go golden, and needs to be bubbling through the middle.
Sprinkle and Melt with more Parmesan cheese when done.

Serve on Chips or Toasted Bread. Cut bread into smallish pieces, put on pan. Use Spray butter (or other) and put in oven until golden brown.

Tuna Casserole

Shopping List:
2 Cans of Large Biscuits
1 can of Tuna
1 can of Cream of Chicken Soup
1 cup + Cheese (I use Colby Jack)
Approx. 1-2 Cups Sour Cream
Approx 1-2 Cups Milk

Optional: Onion

Place the biscuits in the bottom of you casserole dish 1 layer thick. In mixer add Tuna, Cream of Chicken; mix. Then add the milk and sour cream, add until it is about the consistancy of like a (not super thick) creamy soup. You may sautee onions or just add them in. I like to cook the biscuits just about 1/2 of the time they take, before I add the sauce. Otherwise sometimes, it doesn't cook the biscuits all the way through. So at that time, I pull the rack out and pour the sauce over the top. Make sure to cover all the way. Cook for about 15-20 minutes after the sauce is added, or until it is all bubbly and/or golden. Pull out add cheese to top, when cheese is melted...you are done.

*you may also use chicken in the recipe if tuna isn't your cup of tea. Then I would add; garlic salt, pepper, or really any seasoning you like with chicken, even a dry ranch packet of seasoning...mmm!

Easy Crock Pot Italian Beef Sandwiches

Shopping List:
Roast (3-5lb)
Garlic Cloves; I use the pre-diced in the Jars in produce
And a Packed of Italian Dressing Mix

Place a Beef Roast in the Crock Pot. I have tried rump, eye of round, serloin tip, and they have all worked. (I usually get whatever is on sale) Rub the garlic and seasoning on roast. Cook on low for 6-8hrs.
Put meat on buns, and add some cheese. Provolone and Swiss are my favorite!

I have been trying new recipes, because if you are like me...I get sick of cooking the same things OVER and OVER.
